Il Passaggio by Capanna was born in a place where nature has been the true protagonist for generations. Its identity is deeply rooted in Capanna, a historic wine estate in Montalcino, and today takes shape through a gastronomic vision in which sustainability, territory, and responsibility guide every choice. This commitment has been formally recognized through the achievement of ESG certification, confirming a concrete, measurable, and transparent approach to environmental, social, and governance practices.
We believe that contemporary cuisine must be inherently responsible. For this reason, we work exclusively with local, seasonal, and organic ingredients, selected from trusted producers in the surrounding area or sourced directly from our biodynamic garden, cultivated in harmony with natural cycles. Each ingredient is fully respected and utilized in its entirety, minimizing waste and giving life to a cuisine that is essential, authentic, and deeply connected to the Val d’Orcia.
Our environmental commitment is also reflected in the infrastructure that supports the restaurant. In 2025, a 200 kW photovoltaic system became operational, allowing us to cover a significant portion of our energy needs. Water management is based on an intelligent rainwater collection and reuse system, which includes an artificial lake and a large underground cistern, used to irrigate the garden and green areas during the warmer months.
In parallel, Il Passaggio by Capanna is engaged in the progressive elimination of plastic across all operational processes and in the continuous improvement of environmental standards, in line with a long term vision and the principles certified by ESG frameworks.
