This is where Chef Cairone's most expressive and narrative cuisine takes shape, each dish the result of a refined dialogue between Tuscany and Campania: the former offering structure and substance, the latter evoking aromas and suggestion. The menu, in constant evolution, is conceived for a curious and discerning audience in search of gastronomic culture and sensory pleasure.

The commitment to sustainability is complete: zero-kilometre ingredients, waste reduction and minimal environmental impact, in keeping with the agricultural philosophy of the resort. Seasonality is respected by harvesting produce at its peak and preserving it through ancient conservation techniques, weaving together tradition and the full potential of each ingredient in an ethical and considered way.

The experience is completed by a carefully curated wine list, celebrating the finest Tuscan labels and the great Brunello di Montalcino from Capanna winery.
