Starting from June 3rd in the evening, from Tuesday to Sunday, Il Passaggio by Capanna Fine Dining transforms into an elegant, intimate, and immersive gastronomic experience.

Here, Chef Cairone’s most expressive and narrative cuisine comes to life, with each dish born from a refined dialogue between Tuscany and Campania: the former offering structure and depth, the latter bringing aromatic and sensory nuances. The ever-evolving menu is crafted for a curious and conscious audience, seeking both culinary culture and sensory pleasure. The approach is fully sustainable — zero-kilometer ingredients, waste reduction, and minimal environmental impact — all in line with the resort’s agricultural philosophy.

Seasonality is respected by harvesting ingredients at the height of their expression and preserving them through time-honored techniques.
