According to Chef Andrea Barcia, heritage and the land aren’t the only things of value, nor can they simply be revisited or reinterpreted. Curiosity and the search for originality and something different are the aim and therefore new combinations and expertly created new perspectives play a key role.
The result is evident in the menus that we offer our guests: a series of dishes that highlight various aspects of the Tuscan food and wine culture with an expression that always strives to combine experimentation with substance.
