According to Chef Jacopo Monni, heritage and the land aren’t the only things of value, nor can they simply be revisited or reinterpreted. Curiosity and the search for originality and something different are the aim and therefore new combinations and expertly created new perspectives play a key role.

The result is evident in the menus that we offer our guests: a series of dishes that highlight various aspects of the Tuscan food and wine culture with an expression that always strives to combine experimentation with substance.

 

Origins are a determining element and Tuscany, the land where the ingredients used by our kitchen staff come from, is therefore a fundamental part of our work.

It all starts with a stringent selection process aimed at sourcing excellent ingredients which are often sophisticated, high-quality niche products. The products are then transformed by the dedicated work of the kitchen staff so they can reach their highest potential.
